Roasted Broccoli & Cheese Soup

INGREDIENTS

4 heads broccoli, cut into pieces
2 carrots, peeled and sliced
Olive oil, for drizzling
Sea Salt and freshly ground black pepper
1 stick unsalted butter
1/2 yellow onion, diced
1/3 cup all-purpose flour
1/2 teaspoon garlic powder
4 cups unsweetened almond milk
3 cups sharp cheddar shredded cheese

INSTRUCTIONS

Preheat the oven to 375
Slice 2 cups of the broccoli florets and slice the carrots then place on a cookie sheet and drizzle with olive oil, salt and pepper. Bake in the oven until vegetables soften.
In a large pot, melt the butter and add in the onions and cook until softened, 3 to 4 minutes. Sprinkle the flour and garlic powder on top. Stir to combine and cook until the flour is absorbed. Add in the broccoli and carrots along with salt and black pepper. Cover and simmer 20 to 30 minutes. Stir in the cheese and allow to melt.

Salt and pepper more to taste and enjoy!
