3 Tbsp unsalted butter
3 yellow onions, sliced thin
2 tsp white sugar (Swerve)
1 tsp sea salt
2 Tbsp almond flour
¼ cup dry white wine
5 cups low sodium beef broth
1 loaf of French Bread, sliced
½ cup Light Swiss Cheese, shredded
In a large pot over medium heat place butter and onions – cook 15-20 minutes until caramelized, stirring frequently.
Add flour to create a thick paste.
Pour in beef broth and wine.
Cover and simmer on low for 45 minutes.
Place slices of French bread on a cookie sheet and toast 1-3 minutes.
Place soup into bowls and top with shredded swiss cheese and baguette slices.
